Brush vegetable oil evenly over a baking sheet.  With a large chef's knife, cut each cinnamon stick in half, lengthwise along the groove between the two curled edges. Arrange the cinnamon sticks on the prepared baking sheet and set aside.  In a heavy medium saucepan, combine sugar, corn syrup, cinnamon oil and water; bring to a boil over high heat, stirring occasionally to dissolve the sugar. Clip a candy thermometer to the pan and boil until the temperature reaches 300 degrees or a hard-crack stage (when a bit of the syrup dropped into ice water turns hard and brittle). This will take about 10 minutes.  Remove from the heat and stir in apple juice concentrate. Return saucepan to high heat and cook, stirring, until thoroughly combined. Continue cooking, swirling the pan just until the mixture begins to bubble; be careful not to let it burn. Let stand for 1 to 2 minutes, then add the cinnamon extract. Ladle a golf ball-sized amount of syrup mixture onto each cinnamon stick and let set for about 10 minutes until cool.  When lollipops have set, carefully loosen them from the baking sheet. (The lollipops can be stored in an airtight container, with wax paper between.)  Use colored plastic wrap to cover the lollipops.

Broil s'mores 10 to 30 seconds or just until tops of marshmallows are lightly browned.  Cool s'mores. Cut into 2-inch squares.

Heat griddle or large skillet to 375 degrees. Grease lightly with oil. Griddle is ready when small drops of water on griddle sizzle and disappear almost immediately.  In medium bowl, combine pancake mix, water and banana. Stir just until large lumps disappear. Using about 1/4 cup batter for each snowman, pour 2 pancakes, one slightly smaller than the other, onto greased griddle with sides touching to resemble snowman. Cook 1 to 1-1/2 minutes. Preheat oven to 375 degrees F.  Add the rolled oats to the cup of milk and let set for 3 minutes. This is a good time to place the 3 squares of chocolate in a bowl and melt for 60 seconds in the microwave, stirring well after heating. Now, using an electric mixer, beat together the oats and milk with the melted chocolate, olive oil, sugar, egg and vanilla. Beat until creamy, about one minute.  Add the flour, baking powder and baking soda, mixing until well incorporated, about one minute. Drop by rounded tablespoonfuls onto a cookie sheet. Bake for 8-9 minutes until round and puffy.  Serve warm or cool—delicious with a cup of cold milk.  Christine's Notes: Inspired by the drop cookies on page 76 of The Ultimate Cookie Book from Better Homes and Gardens, this recipe is a variation that does not use butter—instead substituting healthier light olive oil (or another light vegetable oil), and eliminating the pecans since neither daughter nor I prefer nuts in chocolate cookies.

Carefully remove top portion and yolk; reserve tops. Place yolks in small bowl.  Add mayonnaise and relish to yolks; mash and mix thoroughly with fork. With small spoon, refill large section of egg with yolk mixture, heaping filling. Top each with reserved top portion of egg. Refrigerate 30 minutes or until chilled.

Cover; blend on high speed about 1 minute or until smooth,  Fill each cup with about 1/4 cup yogurt mixture, Place cups in freezer until partially frozen, about 45 minutes,  Insert sticks; freeze until firm, about 1 1/2 hours.
