Ingredients:
6 large slices white bread, crust removed
6 tablespoons diced ham
6 tablespoons shedded cheddar cheese
6 eggs
salt and pepper

Directions:

Preheat oven to 400 degrees F. Coat 6 sections of a muffin tin with cooking spray.

Roll each bread slice flat with a rolling pin. Tuck a slice into each prepared muffin cup. Be sure all 4 corners of the bread stick out over the rim.

Sprinkle 1 tablespoon diced ham into each nest. Top each with 1 tablespoon cheddar cheese. Crack an egg into a bowl, stir with a fork, then pour into a nest. Repeat with each nest. Sprinkle with salt and pepper.

Fill a baking dish half full with water that is large enough to fit the muffin tin in it. Place the muffin tin in it (the water should not come up over the edges of the muffin tin!). Carefully slip dish onto middle rack in oven. Bake 25 minutes or longer until eggs cook through.

Remove pan from oven, being careful not to spill water into muffin tin. Let cool slightly.

Carefully remove the nests and place each one on a plate to serve.
